Seafood taco filling OMG YUM! Recipe

I threw together a batch of seafood taco filling that came out amazingly

I used vacuum sealed individual portions of salmon, talapia and little bay scallops as well as imitation crab and quinoa


5 oz talapia uncooked

5 oz salmon uncooked

3.5 oz scallops uncooked

4 oz Krab

1 tbs butter

4 oz of cooked quinoa

1/3 – 1/2 cup salsa (I use 2 parts regular medium salsa to 1 part peach/pineapple salsa)



melt butter in a large fry pan and add the salmon, then the talapia and allow to cook for a few minutes, when it is mostly done remove from pan and cut into chunks, put the fish back in the pan then add the drained scallops and cook for about 3 more minutes.  Add the Imitation crab (Krab) and pour the salsa over the seafood.  Stir it all together and then add 4 oz of cooked Quinoa, this will also help thicken any juices and add a little bite to the dish.

you can use whole wheat burrito shells or leafs of lettuce to make wraps or eat with a fork, it is amazingly good.

the entire batch is about 28 oz when finished and breaks down to 46 calories an oz, (16 from fat – only .5 grams of saturated fat and no trans fats) and 2 grams of protein an oz

my 5 oz serving was 230 calories, 10 grams of fat and 20 grams of protein.

It refrigerates well and my non WLS fiance thinks it is delicious.
