Seafood Pasta sauce

2 med onions sliced thin
4 cloves of garlic
2 tbs  butter
Salt, pepper and Italian seasoning
1/2 cup V* or tomato Juice
1 can of diced tomatoes in rice sauce
1 can of sliced Italian tomatoes (pureed)
1 cup chunky salsa
8 oz of small bay scallops
8 oz of salad shrimp
6 oz of chunk style imitation crab meat (or the real thing)

Saute the onions and garlic in butter with a small amount of water to wilt them then toss in the scallops and cook with V8 juice for 3  mins, toss in cooked salad shrimp and crab and then the tomatoes and salsa.  Bring to a simmer and remove from the heat.
Use over rice or whole wheat pasta

((I tried adding Talapia the first time but it tends to fall apart, tastes fine but not necessary… on the other hand it is a cheap and easy way to add more fish to the dish if you dont have as much of another seafood))
